Fullsuit is brewed with the changing seasons in mind. Firm toasted malt and roasted nut flavors are underpinned by a hint of vanilla that comes from aging the beer on French oak. Belgian ale yeast adds a peppery, fruity character to the beer’s slightly dry and warming finish, making it perfect for the (kind of) cold Southern California winter.

A quality session this time of year calls for a Fullsuit. The frigid North Pacific Current rolls in, generating first-class swells and mild hypothermia. While a few brave souls zip up and paddle out with no hesitation, most of us stay on dry land and salute their commitment with a winter warmer of a different kind.

Tower 10 IPA boasts hops from beginning to end, and everywhere in between. We fill the brew kettle to the brim with assertive Chinook hops, giving the beer intense grapefruit and pine flavors that linger through its dry finish. After fermentation, we dry hop with a blend of Cascade and Centennial hops for a floral citrus aroma. A touch of lightly kilned caramel malts make Tower 10 a well balanced, full flavored IPA.

To kick off this series of intense hoppy beers, we wanted to go big. Imported New Zealand Nelson Sauvin hops provide a vibrant tropical aroma that raises eyebrows and expectations. Aggressive amounts of Warrior and Ahtanum hops produce an assertive bitterness that stands out against a firm malt backbone. Balanced even at 90 IBUs, Big Barrel leaves a considerable first impression that serves as a prelude of things to come.
